Paella

There was a Cuban restaurant in California that my husband and I ate at once, and we were so tempted to get the Paella dish— but we got something else. Recently, I branched out and tried this Spanish dish. I served it with empanadas, which I would have posted, but I still need to perfect the dough.

Stuffed Pasta Shells

During cross country season in high school, the team would come together for potluck pasta nights before a race. I remember one time my mom brought stuffed pasta shells and it was a big hit. The “doughiness” of the pasta causes the noodles to absorb the different flavors of the sauce. After a long time of searching, we decided on a summer pasta recipe, but we switched the tortellini for homemade pasta.
