Cinnamon Bread Muffins

Growing up my mom would always make cinnamon bread for anyone moving into their new home. It has always been one of my favorite loaves of bread that she would make. I decided to make cinnamon bread muffins that reminded me of hers. 

1/2 cup butter

1 cup sugar

2 eggs

1 tsp vanilla

2 cups flour

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1 cup buttermilk

1/4 cup sugar

1 tsp cinnamon

Preheat the oven to 375 degrees and line a 12 cupcake tin. Cream the butter and sugar until fluffy. Add one egg at a time until combined. Beat in vanilla. 

Whisk together the flour, baking soda, baking powder, and salt in a bowl. Alternate adding to the butter mixture with the buttermilk. I do three parts flour and two parts buttermilk, beginning and ending with flour. Mix until combined.

Add 1 tablespoon of batter into the bottom of each cupcake tin. This will be about half of the batter. Mix together the cinnamon and sugar in a small bowl. Sprinkle half of the cinnamon sugar mixture over the batter. Use a toothpick to swirl the cinnamon sugar into each cupcake. Add the remaining batter. Sprinkle the rest of the cinnamon sugar over the batter. Use the toothpick or a knife to swirl the cinnamon sugar. 

Bake for 19 minutes, but check a few minutes before. Use a toothpick to check to see if they are done. Let cool on a wire rack. Enjoy!
