No Bake Oatmeal Cookies

For something new, I wanted to do a guest blog post about some No Bake Oatmeal Cookies that my husband made. His mom made these cookies for him when he grew up and have been one of his favorites. These cookies are quite delicious and super simple to make!

2 cups sugar

1/2 cup cocoa

1/2 cup milk

1/2 tsp salt

1 stick butter

3 cup minute oatmeal

1/2 cup peanut butter

1 tsp vanilla

Prepare a baking sheet with parchment paper. Bring the sugar, cocoa, milk and salt to a rolling boil in a medium pot. Cook for 1 minute. Remove the pot from the burner and add the rest of the ingredients. Stir until melted. Use a tablespoon to drop the cookie mixture onto the parchment paper. Place the baking sheets in the freezer or fridge to chill and set the mixture. You can store the cookies in a Tupperware container in the freezer and take the cookies out when ready to eat.

Even though these cookies are super easy to make and are different than my normal posts, it is always great to have a simple thing to make when you are busy. My husband’s cooking / baking abilities are not limited to just these no bake cookies. He is actually quite the cook! It is fun for me to have recipes from his childhood and to continue making them.
